Zesty Cherry Compote Glazed Quail
QUAIL
8 each  
Manchester Farms Semi Boneless Quail

Grill Quail on a medium heated grill until done.
Zesty Cherry Compote
1 each
2 Tablespoons
3 Cups
1 Cup
1 Tablespoon
½ Teaspoon                                   
Onion-Finely Chopped
Vegetable Oil
Fresh Bing Cherries-Pitted, De-Stemmed, Sliced in Half
Chicken Stock
Chopped Fresh Jalapeno
Ground Cayenne Pepper


In a medium sized sauce pan, simmer onions in oil until soft. Add cherries and simmer 3-5 minutes. Add chicken stock, jalapeno, cayenne and cover with lid and simmer for 15-20 minutes until cherries are soft and mixture becomes sauce. Ladle compote on top of the Grilled Quail.
