Bourbon Bacon Glazed Grilled Quail
Quail Preparation
8 each       Manchester Farms Semi Boneless Quail
Grill Quail on a medium heated grill until done.  Allow to cool.  Remove meat from bones.
Bourbon Bacon Glaze
1 each  Onion-Finely Chopped
1 pound  Bacon
1/2 cup  Bourbon
1/2 cup  Tomato Paste
1 cup  Apple Cider Vinegar
1 Tbls  Light Soy Sauce
1 Tbls  Hot Sauce
1/2 cup  White Sugar
1/2 cup  Brown Sugar
1 Tbls  Worcestershire Sauce

Method of Preparation:

In a Pan, cook bacon until done. Reserve 1/4 cup of rendered bacon fat and place in saucepan. Add Onions and cook until onions are soft. Add Bourbon and simmer for 3-5 minutes until the alcohol is removed. Whisk in remaining ingredients and cook until internal temperature of 175 F is reached. Remove from heat. Chop Bacon and Add to Sauce. Serve Sauce on top of the Grilled Quail.
