Spinach + Brown Rice Scramble Recipe.



Ingredients:
1 tsp olive oil
1 tsp minced garlic
2 eggs
1 tbsp milk
salt and pepper
handful pre-washed spinach
1/4 cup brown rice
grated parmesan, to serve

Method:
1. Start boiling your brown rice and cook through for 10 minutes.
2. Heat olive oil in a non stick frying pan on medium heat,and cook your minced garlic and spinach for 1-2 minutes.
3. Quickly whisk your eggs, milk, salt and pepper together, and pour over your garlic spinach mixture.
4. Let the mixture sit for around 20 seconds before beating with a wooden spoon until the eggs are light and fluffy and starting to brown.
5. Drain your rice and add it to the scrambled egg mixture and combine well.
6. Transfer to a bowl and sprinkle with grated parmesan.

Spicy Pizza Pasta Recipe.



Ingredients:
400g pasta of your choice (I use a gluten free rice pasta)
1 tablespoon olive oil
200gr pork mince
3 tsp minced garlic
1 small zucchini, diced
1 long red chilli, finely chopped
2 tins cherry tomatoes
salt and pepper
handful of spinach, washed
1/2 cup cream
1/2 cup grated parmesan

Method:
1. Cook your desired pasta in a saucepan of salted boiling water for however long is stated on the packet.
2. While your pasta is cooking, heat some olive oil in an electric frying pan on medium heat, and start cooking your mince.
3. Once browned, add your minced garlic, zucchini and finely chopped chilli and continue to cook for another couple of minutes.
4. Next, add your tinned cherry tomatoes (I like to break mine down a bit with a wooden spoon), salt and pepper, and handful of spinach and cook for 3-4 minutes.
5. Stir in the cream, parmesan cheese and drained pasta.  Stir to combine.
