Super healthy tahini balls
This tahini balls recipe is truly kid-friendly because it involves full-on hand rolling action so it’s about as messy as a finger painting session – the kids will love it but you will need to keep some wet hand cloths at the ready!
prep: 0:30
ingredients
- 1/2 cup linseeds
- 1/2 cup buckinis
- 1/4 cup honey
- 1/2 cup tahini
- 1 cup desiccated coconut
- 1 cup dried apricot
method
- Pulse linseeds in blender to begin with, to grind them into meal, then transfer to mixing bowl along with all other ingredients except for the apricots and 1/2 cup desiccated coconut.
- Add apricots to blender and chop into a sticky pulp then scrape into the mixing bowl. Using your hands, squish well into a thick, sticky mixture.
- Take teaspoon-sized portions of mixture and roll tightly into balls, then roll through the extra desiccated coconut and place into lined container.
- Yields about 25 – 30 balls depending on how large they end up.
- Store in the fridge to set before eating, but know the kids are going to want to eat them as they’re rolled!
notes
- These sweet, protein-packed treats are free of all the usual allergy suspects so they’re a perfect play date snack and are lunch box safe.
- I used sulphur-free apricots, which you can buy from health food stores, some health food aisles from supermarkets or specialty grocers. Dried without sulphites, apricots appear dark brown and are much sweeter, almost like a date, which is why I’ve used only a 1/4 cup of honey as otherwise they’d be too sweet.
